4 1 1/2-inch-thick boneless pork center loin chops 1 large red onion
sliced 3/4 cup lime juice 1/2 teaspoon cayenne pepper
Combine onion, lime juice and pepper. Marinate pork in mixture, refrigerated, several hours. Prepare medium-hot coals in covered grill, banking coals on sides of grill. Remove chops from marinade, reserving marinade. Place chops on grill and grill over indirect heat 15-18 minutes, turning once. Heat marinade to boiling, serve with pork.
