Ingredients:
1 tsp olive oil
2 shallots
peeled and chopped
2 cloves garlic
minced
3 cups diced fresh tomatoes
2 cups torn fresh spinach leaves
1/4 cup chopped fresh basil
1/4 tsp salt
1/8 tsp pepper
8-ozs of Won Ton wrappers
Directions:
In a large non-stick skillet, heat oil. Saute shallots and garlic for 2 minutes. Stir in tomatoes, spinach, basil, salt, and pepper. Cook and stir occasionally over medium heat for 5 minutes, or until mixture is heated through. Cover and keep warm over low eat. In a 3 quart saucepan, bring water to boiling. Cut Won Ton squares into 1/4 inch thick strips; separate and drop into boiling water. Cook, stirring occasionally to keep them separated for about 3 minutes or until done. Drain and serve immediately topped with tomato sauce. Garnish with fresh basil, if desired.
