Ingredients:
1 pound boneless pork loin
1/2 pound bacon
sliced
8 cups torn fresh spinach
3/4 cup red wine vinegar
1 tablespoon sugar
Dash salt
1 medium apple
cored and cut into wedges
1/2 cup raisins
Directions:
Partially freeze pork; slice across the grain into thin strips.
Cut uncooked bacon into 1-inch pieces. In skillet, cook bacon
till crisp; remove. Drain on paper toweling. Pour off bacon
drippings into a 1-cup measure, reserving 1 tablespoon drippings
in skillet. Add half the pork to skillet; stir-fry 2-3 minutes
or till browned. Remove pork. Stir-fry the remaining pork till
browned.
In a large bowl combine bacon, pork and spinach; set aside. For
dressing, in a small saucepan combine the reserved drippings,
vinegar, sugar and salt; cook just till heated through. Pour
dressing over the pork-spinach mixture. Add apple and raisins;
toss gently. Serve immediately.
